Grams and ounces

Worth knowing

  • The 1.2% gap between 28 g and the true 28.35 g is negligible for a single serving but adds up in baking, where hydration ratios (water-to-flour percentage) depend on precise weights. Professional bakers generally weigh in grams directly rather than converting from ounces at all.
  • US food labelling almost always states both grams and ounces on the same package, since US law requires ounces while most trading partners expect metric. The two figures on a label are simply the same conversion applied by the manufacturer.
  • Precious-metal and drug-related ounces are different again: the troy ounce (31.1034768 g), used for gold and silver, is about 10% heavier than the everyday avoirdupois ounce used for food. Mixing the two up materially changes a value.
